Seven Companies Allowed to Produce 'Real' Bulgarian Yogurt

Seven Bulgarian companies have received permission to produce yogurt meeting the requirements of the newly adopted state standard.

Danon Serdica, OMK, Polyday-2, Bor Chvor, Mlechen Svyat 2003, LB Bulgaricum, and Zorov 91- Dimitar Zorov are the names of the companies approved by the Ministry of Agriculture.

The Bulgarian state standard includes the exact requirements for producing Bulgarian yogurt, as well as the name of the Bulgarian bacteria - Lactobacillus bulgaricus. This national standard refers to yogurt, produced by cow, sheep, buffalo,goat/caprine/ milk or mixed milks, processed by fermentation with symbiotic cultures of the bacteria.It is also obligatory that the product should have a 20-day expiry period.

The regulations are based on the older state standard abolished in 1998 with the argument that Bulgaria had to harmonize its regulations with those of the EU.

The Bulgarian yogurt is the most famous Bulgarian food product. It is extremely popular in Japan, where it holds about 60% of the food market.
