Bulgaria's 'Real' Yogurt Available in Stores

The signs for the state standard for Bulgarian yogurt was officially published and will be active starting Thursday, the Bulgarian Institute for Standard announced.

“The standardization will be active starting today. The sign will be sold to all the producers who would like to sell their products under the standard,” said Galin Ganchev, head of the “Publishing, sales and service” department in the institute.

Ganchev has explained that the code and name of the standard will remain the same as before (BDS - 12), even though some changes have been applied and the state is not involved anymore.

“There have been some major changes in the standard. Now it includes goat yogurt as well. There are also requirements for the raw materials and packaging, which will be polystyrene, pottery and glass jars, containing up to 1 kg,” experts from Institute for Standard said,

They have also warned that Bulgarian yogurt should be kept in a temperature of 2 to 6 degrees Celsius and the expiration date will be 20 days from the production date.

Raw cow, sheep, buffalo, goat and mixed milk must be used for the preparation of the Bulgarian yogurt. Also, the ferments must be made out of unmodified genetically Streptococcus thermophilus and Lactobacillus bulgaricus.

The state standard for brined cheese is expected to be ready by the end of July. Bakery and meat producers have also announced they are working on projects for preparing state standards for their products as well.
